5 Minute Easy Mac

This easy mac is very simplistic and takes only a few minutes to make. My kids still request the macaroni and cheese that comes in the blue box. Even now, it is hard for me to not want some too. One thing is certain, that blue box stuff is not healthy.

My kids still request the macaroni and cheese that comes in the blue box. Even now, it is hard for me to not want some too. One thing is certain, that blue box stuff is not healthy. 

This easy mac is very simplistic, especially if you already have the instant cheese sauce on hand. The dish was inspired by wanting a quick meal with hidden vegetables. Trim Healthy Mamas, this meal is the fuel of your cheese sauce which is the Instant Cheese Sauce from the Trim Healthy Future cookbook page 280. I made the E version with potatoes and carrots so therefore this easy mac is an E.  

Even if you do not have the sauce pre-made, it takes only a few minutes to make or you can substitute regular shredded cheese of choice, but you will not have all the hidden vegetables. I use Dreamfields pasta because it does not raise my blood sugar due to its lower glycemic index.  

5 Minute Easy Mac

Serves: 1 

THM:S, E, FP, or XO (depends on the fuel of the cheese sauce), dairy free, and sugar free  

Ingredients 

1/2 cup Dreamfields elbow pasta, dry 

1/2 cup hot water 

4 oz. ham (I use Jennie-O turkey ham or CIBO bars) 

1/3 cup instant cheese sauce (or amount to get the saucy consistency you like) 

Instructions 

  1. Measure out the pasta and place in a microwave-safe bowl. Add hot water to the pasta and microwave the bowl, uncovered, for 3 minutes. 
  2. While the pasta is cooking, cube the ham if it is not already. When the microwave dings, add the ham and cheese sauce to the pasta and combine well. If there is not enough sauce for your liking, add more until it is just right.  
  3. Microwave again for 1 minute. Check to see if the pasta is soft. If it is still hard put the bowl back in the microwave for 30 second intervals until soft. Do not overcook.  
  4. Stir once more and enjoy!
